Chocolate Mousse

Don’t confuse this with a typical chocolate pie.  We make our rich chocolate mouse from egg yolks, very little sugar, dark chocolate, and unsweetened whipped cream (OK, there’s a bit of espresso in there too).  This is a thick, luscious, and intensely chocolatey mousse in our all-butter crust and topped with lightly sweetened whipped cream.  This pie is significantly more expensive than our other pies due to the extremely sharp increase in the cost of both chocolate and egg yolks used to make it.
