Chocolate Mousse

Don’t confuse this with a typical chocolate pie.  We make our rich chocolate mouse from egg yolks, very little sugar, dark chocolate, and unsweetened whipped cream (OK, there’s a bit of espresso in there too).  This is a thick, luscious, and intensely chocolatey mousse in our all-butter crust and topped with lightly sweetened whipped cream.
