Blueberry

A blend of wild Maine blueberries, large conventional berries, and lemon juice make the perfect pie filling.  We kind of fell into the Maine wild blueberry craze for the longest time, but when there was a shortage we mixed in conventional blueberries in a moment of desperation.  The combination was so much better in flavor and texture that we never went back; the old pies simply seemed boring to us.  Over 1 and half pounds of filling goes into each 9” all-butter crust pie.  Our pies are baked on a hot stone-floor oven to crisp up the crust.
